某个晚上,小曲童鞋两口子来吃饭,四人帮再次聚在一起四人小聚餐 <wbr> <wbr>风卷云残之水煮鱼,俺手艺有限,手忙脚乱做了六个简单滴菜,别说,其中那盆水煮鱼竟成功征服了介三个嘴刁的孩纸(算上某田),应要求俺把做法贴出来……四人小聚餐 <wbr> <wbr>风卷云残之水煮鱼

高手们就别进来浪费时间了,俺知道俺这个太低级四人小聚餐 <wbr> <wbr>风卷云残之水煮鱼,入不了法眼~~只给某个连我都不如的新手四人小聚餐 <wbr> <wbr>风卷云残之水煮鱼

 

 水煮鱼(三青年夸我做滴比饭店还好吃,我虚荣心极度膨胀四人小聚餐 <wbr> <wbr>风卷云残之水煮鱼)

 

原料:鲤鱼、黄豆芽、盐、胡椒粉、淀粉、鸡蛋、花椒、辣椒、八角、郫县豆瓣、葱姜、白酒、油等

做法

1、鲤鱼肚子里的内脏去掉,鱼鳞刮干净,剪去鱼鳍并冲洗多次后,去除腥线,

2、沿着鱼的主刺用刀将鱼一片为二,将鱼肉片成大小适中的鱼片,鱼头剁两半,鱼骨剁小块

3、在鱼片里加入适量盐,打入一个蛋清,一勺淀粉、几滴白酒、少许花椒粉拌匀,腌制半个小时左右,鱼头、鱼尾、鱼骨也加少许盐和胡椒粉腌制

4、葱切末、姜切丝、辣椒用剪刀剪开去掉籽,豆瓣酱用刀剁碎备用,豆芽清洗干净后焯熟铺在盆底

5、锅里多放些油,将花椒放入锅小火炸制,炸出香味后可以倒出一部分油以备后用,放入豆瓣酱入锅煸炒出红油,加入葱姜、辣椒和八角

6、将鱼头、鱼骨和鱼尾放入锅中翻炒,翻炒均匀后倒入热水,水中加入适量盐

7、等水沸腾后转中火,将腌好的鱼片一片片丢入水中,鱼片一熟就关火,将汤和鱼一同倒入装有豆芽的盆中

8、将一开始炸花椒的油倒入锅中,小火加热,油七成热后关火,将剩下的辣椒放入油里,并迅速浇在盆里的鱼肉上,水煮鱼即成

 

俺用滴小窍门:

1、鲤鱼也可以做水煮鱼。俺做的水煮鱼并不比草鱼做的差,肉质极其嫩、味道也很好,原因就在于去除鲤鱼的腥线、以及用蛋清、淀粉腌制

2、腌制鱼肉的时候,加入适量盐可以让鱼肉更入味,加入少许胡椒粉和白酒是为了更好地去腥提鲜

3、花椒要用两种花椒,绿色的鲜花椒,红色的干花椒,这是俺的秘密法宝,春天才有的鲜花椒放在冰箱冷冻,可以用一年

4、郫县豆瓣酱是水煮鱼必不可少的调料,也是川味的来源,必不可少

5、下锅煮鱼片的时候,一定不能大火,否则容易将鱼片煮碎,时间也要掌握好,时间长了,鱼肉不嫩,大约2分钟左右就可关火,不要用铲子去铲鱼片,端起锅直接倒盆里,可以保持鱼片完整
